For me this is quite individual. I personally don’t plan deloads I use them autoregulative. There are some redlights for me:
1. If I notice my apetite is going down.
2. If feel overly tired even though I sleep enough.
3.If performance in the gym is decreasing. These are my redlights where I have to deload or even rest up for a week. Most of the time I prefer to restup fully with mobility and active recovery work. -
I personally like to write it in a logbook as I use my phone allday and I don’t want to get disturbed during my training with any client things?

If you find it tough I would keep cal the same anything that stresses you out isn’t optimal long time. I personally only have 2 different days one for restday one for training day. But that’s just preference.

Restday deep tissue massage and getting ready for tomorrow’s legsession. Few client checkins and some cardio but all in all a good restday.

How long it takes you to get through the sessions, I wouldn’t set a time limit to a session if you don’t have to.

Definitely rest up for the week. Depending nutrition just eat what digests easy and what fits. Don’t overthink these few days you should focus in getting healthy again and nothing else.

Some client checkins, 2 walks one morning one evening, Having a good midday nap eating all my meals makes a good restday so we are ready to pull heavy tomorrow!!! -
From the info you gave above I would state that you should do a longer cut and get bf down lower to be more insulin sensitive as 15% is as you said reasonably high.
