The really hard answer here is, if he hasn’t made progress, he hasn’t done everything right
The good news there is tht he has opportunity to right that.
As the gang have said, it isn’t a swift process, and even less so for some more than others.
Have a bash at addressing Allison’s questions to get a sense of where he needs to go.

Whilst you may not need a coach, and may well be better doing your own thing, it sounds very much like you need to do a more thorough job of understanding the philosophy of the coach you are looking to hire.
There are many coaches with many different approaches, I’m quite sure there will be reputable options that align with your principles.

Very decent pull session today. Gym was nice and quiet so no breaking the flow.

Typically for an upper/lower split you will do well on an upper, lower, rest, repeat type cycle, with some requiring every other day training (upper, rest, lower, rest, repeat).
If you’re recovering very well from upper sessions, it might indicate tht you have room for some additional volume, or it might just be that it was very short lived and not a consistently good recovery.
I would be reluctant to increase the frequency beyond upper/lower/rest/repeat, so if you do have extra capacity, I would explore some additional volume skewed towards areas of greatest need.

Tomorrow has turned into a very busy work day which I was hoping wasn’t going to be the case, but still looking forward to getting my training session in.
Just about to get my last meal and then I’m hitting the sack.

Really happy with the movements tonight, body felt good, weights keep creeping up.
Resting tomorrow, then I’ve got 3 on the bounce.
Food prep all done for a long day at work, then hoping for some time to catch up over the weekend

Agree with Clare here. Noodles, if they digest well, are not an issue, but there’s a difference between plain noodles and instant packs – largely the associated ingredients that go along with it!
